It doesn’t matter if you have a Valentine or not, this event is still an occasion to drink wine! So here comes the time to wonder: what wine will you chose? To us, special occasions are the perfect opportunity to drink special wines, that’s why we’ve chosen to introduce you to the WINE OF FIRE!!! Doesn't that sound very special? Wine of Fire exists as a sparkling white or rosé wine and it is literarily shiny! It’s made from Spanish grapes, Tempranillo and Airen, it’s sweet and tastes like fruits and sparkling particles are added to give it its shininess. But the most funny thing about this wine is that it comes in a various range of colors! It means that you can adapt the color of the wine to the way you’re feeling on that special Valentine's day evening. And if you want to try another color, there’s also the VULCANO, SKY and FORTUNE (full of promises, isn’t it?) Wines of Fire!
And guess what? If you're more appealed by spirits than by wine, the good news is that Vodka of Fire and Gin of Fire also exist!

What is it exactly? This wine is a big innovation due to the presence of THC (the molecule of cannabis). We can find in this product the green colour of cannabis but also its taste. The main goal was to find a compromise between the wine and the alcohol but also the effect of cannabis. What about the production? This wine is produced from 2 organics red grape varieties Grenache and Carignan from the Costa Brava. The characteristics are the intense red colour and a sweet flavour with a touch of red and black fruits. |
Recipe:
Ferment the must of the wine like tea with the leaves of cannabis. You will need 1.5g of leaves of cannabis per litter of wine. Infusion lasts 9months.
Very funny when we compare the time of infusion of a tea which is only 3minutes to get all the benefits of the tea, and the infusion of this green wine.
“Easy to drink but difficult to forget” it’s the motto of the CannaWine. Indeed, this wine represents 14.5% of alcohol and we can find 50mg of CBD and THC under the legal limit 0.2%. It’s better to drink this wine very cold!

This is an organic white wine 100% sauvignon blanc produced under the Protected Geographical Indication Val de Loire label. It’s a very perfumed wine with lots of exotic fruits to face the winter. We can smell aromas of cooked banana, apple jam, pineapple syrup and honey, passion fruit. All these aromas bring freshness and liveliness. It’s not a dry nor a sweet wine, Blanc d’Hiver has found the middle ground between those 2 different types of wines. |
If we can give you a tip, try it with a fig pie in dessert or with a homemade veal blanquette.

This week we tought you’d like a sparkling wine, because you know, Christmas is this week-end !!!
Indeed, as we are not all able to buy Champagne, a sparkling wine can be a very good alternative at a cheaper price. We advise you to always choose a sparkling with traditional method*.

When we smelled it, we really felt some hints of grilled and fresh toasts and floral smells as well. It appeared very fresh and mineral too !
On the tongue, we felt that honey is the main flavour of this wine, with some little inches of plum and lemon zests. Not a surprise but a really nice moment !
If you insist to eat with it, we suggest a lemon pie covered with meringue (DELICIOUS) or if you are traditonnal, why not a HUGE Yule log ?

We know you did but fortunately, we're back with a brand new wine tasted and approved ! We know the waiting has been long since last week so no more talk, let's discover this fresh French white wine (not easy to say, don't you agree?)!

Advices:
Enjoy the freshness of this white wine with your friends, when eating something greasy like a raclette, tartiflette or a fondue. Yeah, you know, all this type of plates for which you don't count calories... We must say, it's not the healthiest choice but who doesn't dream about this kind of fatty, but still so delicate for your palate, food while drinking a fresh white wine as is François Chidaine 2015?
Tasting Notes:
Nose: We smelled peach, white fruits and citrus fruit. Such aromas are typical of a Sauvignon so there was no surprise but who needs to be surprised when these aromas are so well developed?
Taste: finally comes the time to taste the wine! This wine has a certain bitterness in mouth that we didn't expect at all, but nothing unpleasant. While drinking, you can feel floral aromas, you know, as if you were sleeping in a field of fresh flowers (is it too much?). There's also a great sucrosity and the finale is not so long but long enough to feel that the wine is a good one.
Some interesting notes about the production:
The vineyard is grown biodynamically since 1999.
The harvest is done by hand.
François Chidaine is a major actor for Loire white wines.

TELISH 2011
YOU WERE WAITING FOR IT? HERE IT IS!
Last week, we showed you that a seemingly classic Bordeaux wine could be very surprising in its taste and its profile.
Now, it’s time to reverse the roles…
We are glad to introduce you to Telish 2011, a bulgarian wine which is nothing less than surprising!

ABV: 14.5° alc.
Location: Bulgaria
Grape varieties: Sangiovese & Merlot
Average price: 7.5€
Can be found at: La Ligne Rouge (Bordeaux, south of France), Wines Marc Jacob (Belgium), online, at the domain (if you have the chance to go there !) and in more than 15 countries (refer to their website).
Advices:
First of all, we have to say that Telish must absolutely be opened minimum one hour before tasting. If you don’t, you will just feel the alcohol (even if it’s the final point, isn’t it better to feel something on your tongue at the same time ?) and tannins.
Our advice: bring this wine to your father-in-law for dinner. Why ? To begin, because it’s so classy to bring a bulgarian wine to a boring family dinner. You will be the wine connoisseur, the unexpected one! But yes, there is a true reason. This wine is meant to be paired with a very good meat (and we know that all students cannot afford a 35 pounds piece of steak) and so you won't have neither to cook, nor to buy the meat .
If you insist on drinking it on your own or with good friends (we know you want to show-off!), we suggest to serve it with a huge burger and french fries. But choose a superior-quality steak and if you can, cook it yourself.
Tasting Notes:
Nose: aromas are quite developed for a 2011 and we found some expected ones as prune, sultana or dark chocolate. But we also found a delicate smell of caramel fudge and croissants (which is quite surprising but in a very good way !) and even a feeling of smelling a liqueur-filled chocolate !
Taste: Yeah, we know that this is the only part you read 90% of the time in matter of wines ! So, let’s be clear. This bulgarian wine have a very intense freshness (meaning your palate is not soaked by the wine) and we felt like it has aromas of liquorice and fresh mint. You could agree that it is not expected for a red wine. Tannins are so delicate, you can’t even feel them. It’s just a little jot of roughness at the beginning, and it’s delightful. Mix that with a tiny bitterness and a short-lasting taste, it makes a very refreshing wine for a red.

Enough suspense! Just sit comfortably and try to imagine what its taste could be.

If you really insist to eat food with it, we suggest the perfect student-wine-pairing: a classic Margarita pizza, with a little bit of persillade.
But don’t you add chili sauce on it, you fool ! It would destroy all possibility for your tongue to capture aromas from the wine!

- Taste: surprisingly fresh! There is absolutely none mark of tannins (which is very bizarre for a wine in that appellation, with those grape varieties) and there is a very good balance between acidity and sugar.
- Aromas: fresh red berries and a little bit of dark chocolate.
